Before he became a chef, Damian D’Silva was just a young boy observing his Grandad, Gilmore D’Silva, the longtime caretaker of the Supreme Court, cook dishes from memory, passed down over 200 years. 
At Gilmore & Damian D’Silva, those same recipes are carefully revived. Once prepared in a modest kitchen behind grand court halls, they are still made from scratch — with patience, precision, and heart.

Born in Singapore of Eurasian heritage, Gilmore D’Silva, affectionately known to Chef Damian as Grandad or Pop

Gilmore served as a detective in the Singapore Police Force before transitioning to the role of caretaker at the Supreme Court, now the National Gallery Singapore, where he dedicated over 2 decades to this position. It was here, too, that he cooked for friends, judges and anyone who came to his table.
 

A proud Singaporean who embraced all cultures readily, Gilmore passed on a spirit of openness and culinary curiosity that would shape his grandson’s life’s work. Today, Chef Damian carries that lineage forward with every dish he prepares, drawing also on the Peranakan traditions of his maternal family.

Widely regarded as one of the top dining options in the Civic District, we are a natural choice for those visiting the National Gallery Singapore, exploring the City Hall area, or simply looking for a meaningful meal in the heart of the city.

Is there parking?

Underground parking is available at the National Gallery Singapore, we are nearest to lobby B.

What is your cancellation policy?

Groups of 6 or more persons are required to pay a deposit of $50 per person. 
Cancellation Policy:
More than 48 hours: Fully Refundable 
Less than 48 hours: Partial refund of $25 per person
Less than 24 hours: Deposit will be forfeited

What is your wine corkage policy?

Corkage-free! We encourage guests to bring their own wine. Kindly note that a glass rental fee of $5++ per glass used applies.

Is the menu suitable for Vegetarians?

Eating well here is not limited to meat-eaters. Our menu includes several vegetarian options such as the Jackfruit Rendang, a plant-based take on an iconic recipe served by Chef Damian for over 25 years, as well as the Brinjal Pacheree, Wing Bean Kerabu, and Stir-Fried Market Veggies. Please let your server know of any dietary requirements when you arrive.

What kind of cuisine do you serve?

We specialise in Eurasian food (a combination of European and Asian), drawing from heirloom recipes rooted in Singapore’s earliest days, a rediscovery of Kristang, Malay, Chinese, and Sri Lankan culinary traditions that shaped the community Grandad Gilmore belonged to. As the Eurasian restaurant Singapore looks to for authentic heritage dining, our repertoire extends in The Caretaker’s Room to Peranakan, Indian, and other multi-ethnic dishes upon request.

Do you serve Afternoon Tea or High Tea in Singapore?

Yes. Our afternoon tea experience, Gilmore Afternoon Tea, is one of the most distinctive high tea Singapore has to offer, available on Saturdays and Sundays from 3.00pm to 6.00pm, at $38++ per person. Beyond the usual, it is a unique dining experience rooted in heritage, featuring savoury bites alongside dessert options you will not find elsewhere, from handcrafted artisan kuehs made fresh daily to Eurasian classics like the sugee cake and kueh bingka.
 

We take quiet pride in serving some of the best kueh in Singapore. Each piece is carefully made from scratch with ingredients received just hours before. Round it all off with free-flow coffee, tea, or soft beverages, and you have an afternoon that is worth every slow minute.
 

How far in advance should I make a reservation?

Walk-ins are welcome subject to availability, but we recommend booking ahead, especially for weekends and public holidays. For The Caretaker’s Room private dining, a minimum of one week’s advance notice is required, and one month for the Chef Experience Menu.

Is Gilmore & Damian D'Silva suitable for corporate lunches or client entertaining?

Absolutely. The Caretaker’s Room offers an intimate private dining setting for 8 to 16 persons, complete with a private entrance, Wi-Fi, TV, and other practical considerations. It is a quietly prestigious space where our unique dining concept and many of our signatures will make a meaningful impression — ideal for business meetings, client dinners, or team celebrations. To complement the occasion, we are pleased to offer our Set Lunch at $38++ per person, a curated selection of starters and vegetable dishes that bring the full depth of our heritage cuisine to the table.
