Chef Damian D'Silva is the chef-founder of Rempapa and one of Singapore's most respected voices in heritage cooking. Over decades in the industry, he has tracked down, tested, and preserved recipes from Eurasian, Peranakan, Malay, Indian, and Chinese home cooks and hawkers — dishes that might otherwise have faded from memory. His work has earned recognition from Michelin, the Singapore Tourism Awards, and La Liste, but his focus has always stayed the same: making sure the rich stories and flavours of Singapore's past continue to be savoured at today's table. At Rempapa, that devotion comes through in every plate, every kueh, and every curry.
